- Beautifully finished and expertly hand-sharpened, this knife is part of our Hayate series resulting in a VG-10 knife that is exceptional quality and has a higher grade of fit and finish than our standard VG-10 Knives. This Hayate Series VG-10 Semi-Stainless Steel Series (HRC 61) has been forged in extremely high temperatures to achieve a hardness level that is unusual in VG-10 stainless steel knives.
- The hard steel of the VG-10 allows for a superior sharpness and edge retention while the softer, surrounding steel adds durability. The knife is then meticulously hand-sharpened with great care and skill in order to achieve a perfect balance between high-performance and the ease of maintenance from a semi-stainless steel blade.
- One of the most essential knives a chef can have is a Japanese slicing knife known as a Sujihiki knife. The Sujihiki is a slicing knife with a long narrow blade that smoothly slices through meat or vegetables and preserves the integrity of each ingredient?s freshness. The Sujihiki slicer is perfect for fabricating large roasts to thinly slicing cucumbers or smoked salmon.
